Daring Cooks

Daring Cooks February 2012|Patties!

Specifically, Rösti!

The Daring Cooks’ February 2012 challenge was hosted by Audax & Lis and they chose to present Patties for their ease of construction, ingredients and deliciousness! We were given several recipes, and learned the different types of binders and cooking methods to produce our own tasty patties!

I have never made hashbrowns successfully.  I’ve managed to brown potatoes in a pan somewhat effectively on occasion, but I’ve never made a truly beautiful plateful of hashbrowns – until now!

Daring Cooks September 2011|Stock, Soup & Consommé!

Participating without really participating!  But first…

Peta, of the blog Peta Eats, was our lovely hostess for the Daring Cook’s September 2011 challenge, “Stock to Soup to Consommé”. We were taught the meaning between the three dishes, how to make a crystal clear Consommé if we so chose to do so, and encouraged to share our own delicious soup recipes!

Daring Cooks July 2011|Pasta!

Let’s get down to it!

Steph from Stephfood was our Daring Cooks’ July hostess.  Steph challenged us to make homemade noodles without the help of a motorized pasta machine.  She provided us with recipes for Spätzle and Fresh Egg Pasta as well as a few delicious sauces to pair our noodles with!

So…we’ve made a lot of pasta.  In the fall, it’s an almost once-a-week kind of thing around here.  We love it.  This past winter and spring, we created a sweet potato ravioli to die for.  It’s super yummy.

Daring Cooks March 2011|Me Encanta Perú! (Ceviche y Papas Rellenas)

Howdy bots!

Kathlyn of Bake Like a Ninja was our Daring Cooks’ March 2011 hostess. Kathlyn challenges us to make two classic Peruvian dishes: Ceviche de Pescado from “Peruvian Cooking – Basic Recipes” by Annik Franco Barreau. And Papas Rellenas adapted from a home recipe by Kathlyn’s Spanish teacher, Mayra.

Wait…Kathlyn…that’s me!

I was so honored to host this month’s Daring Cooks challenge.  To be asked was just the tip of the iceberg; putting recipes out there and seeing what this fantastic group of cooks came up with to rise to the challenge was…well, at the risk of sounding corny, it was humbling, but it was also an awful lot of fun!

Daring Cooks December 2010|Well that was French! (Cassoulet)

Oh. My. God.

Best. Dinner. Ever.

For the bots (hi bots!):

Our January 2011 Challenge comes from Jenni of The Gingered Whisk and Lisa from Parsley, Sage, Desserts and Line Drives. They have challenged the Daring Cooks to learn how to make a confit and use it within the traditional French dish of Cassoulet. They have chosen a traditional recipe from Anthony Bourdain and Michael Ruhlman.

Daring Cooks November 2010|(a bout de) Soufflé!

I’m sure this must be some kind of pun in French, and it’s probably either makes zero sense or is really awful, but then – it goes perfectly with my November DC challenge!

Hey, I snuck in a DC challenge!!

Dave and Linda from Monkeyshines in the Kitchen chose Soufflés as our November 2010 Daring Cooks’ Challenge! Dave and Linda provided two of their own delicious recipes plus a sinfully decadent chocolate soufflé recipe adapted from Gordon Ramsay’s recipe found at the BBC Good Food website.

Daring Cooks September 2010|Canning!

First, the important bits of business:

The September 2010 Daring Cooks’ challenge was hosted by John of Eat4Fun. John chose to challenge The Daring Cooks to learn about food preservation, mainly in the form of canning and freezing. He challenged everyone to make a recipe and preserve it. John’s source for food preservation information was from The National Center for Home Food Preservation.

Yes!  At last!  I learned how to can stuff!

Daring Bakers August 2010|It’s Posting Day!

It’s Daring Bakers reveal day and although I did not participate in the challenge, I wanted to give a shout out to some fellow DBs and link to some of their heavenly Baked Alaskas and Petit Fours!  The challenge was hosted by Elissa of 17 and Baking, who teamed up with Sugar High Fridays for a DB co-event.

Daring Cooks June 2010|Pâté

Bon été!  It’s time again for marvelous munchies with the Daring Cooks.  And the flavor of the month is fantastic pâté!  But before we get in too deep, a word from our sponsors:

Our hostesses this month, Evelyne of Cheap Ethnic Eatz, and Valerie of a The Chocolate Bunny, chose delicious pâté with freshly baked bread as their June Daring Cook’s challenge! They’ve provided us with 4 different pate recipes to choose from and are allowing us to go wild with our homemade bread choice.

Daring Cooks November 2009|Sushi!

Sushi - 11

Yes, I’m late with my Daring Cooks post but I have an excellent excuse – I was partying down with my soon-to-be 95 year-old Nana up in Northern California. Pretty good excuse, yes?

A word from our robot sponsors:

The November 2009 Daring Cooks’ Challenge has been chosen by Audax of Audax Artifex and Rose of Bite Me Kitchen. They chose Sushi, specifically Dragon Rolls, Nigiri and Spiral Rolls.
